This site has instructions on how to make a model arthropod joint, which can be also be modified to represent a vertebrate joint.

A simple model can be made using toilet paper or paper towel tubes with a pencil or pen as the pin holding them together. I put knots on both ends of my yarn so that I could pull the strings to hang outside of the tube to model a vertebrate joint.

For model biceps to go with the previous lesson, I have seen a few made with cardboard tubes and balloons, although I have not tried it myself.
